Maine Moose Cookies

Moose CutterRecently I went camping in ME.  Yes, it was Labor Day weekend and as you might have guessed, I am a bit behind in getting all my stuff out to those who might care! 

Anyway, back to Maine… on the way back through the tolls we always get a little prize… of sorts.  One year it was a mouse pad with Maine highlights on it… this year it was a little packet with a cookie cutter and a recipe. (see photos)  Well, I tried the recipe and although I wouldn’t recommend the cookie cutter in the shape of a moose as it will tend to give you cookies w/o antlers or legs unless you are really good or really patient… I am neither but the recipe was quite good. 

Shortbread Moose Cookies (or as I referred to them as Maine Maple Moose cookies) 

Pre-heat oven to 350 degrees

¾ cup of butter, softened

¼ cup brown sugar, room temperature

2 cups all purpose flour 

Mix softened butter and sugar in large bowl.  Stir in the flour.  If the dough is crumbly, mix in 1 to 2 tablespoons more of softened butter.  (Note:  if it sticks together and is mixed… it is done) Roll dough one half inch thick (or more) on lightly floured surface.  Spray cookie cutter with cooking spray.  Cut into shapes with cookie cutter and place half of an inch apart on an ungreased cookie sheet.  Bake about 20 minutes or until set.  Immediately remove from cookie sheet to a wire cookie rack.  Serve these buttery cookies plain or top them with maple glaze using Maine maple syrup (of course) 

Maine Maple Glaze

1/4 cup softened butter

½ cup Maine maple syrup

1/3 cup powdered sugar 

Cream together butter and maple syrup.  Add powdered sugar.  If glaze is too thick to spread, add a little milk or cream.  Brush over tops of cookies with a pastry brush.
