Roasted Garlic Onion Jam Pizza

On a recent trip to Maine I stopped at the Stonewall Kitchen outlet in York.  This place is the coolest thing for anyone interested in culinary arts.  They have a cooking school and classes all summer long.  While walking around sampling jams and relishes and many other delights… I happened to find this recipe… it sounded unusual so I got the ingredients and made this for dinner.
Ingredients:
1 Thin crust pizza (12″ Boboli)
3 Tbsp Stonewall Kitchen Roasted Garlic Onion Jam
1/2 Cup Blue Cheese (or Feta, Goat or any cheese)
Directions:
Preheat oven to 450 degrees
1) If using fresh pizza dough (like I did) roll out dough on stone and put in oven until just turning light brown.  Remove from oven and start step 2. If using store bought ready crust, skip to step 2. 
2) Spread the jam evenly over crust.
3) Sprinkle cheese over entire top of the pizza.
4) Bake 8-10 minutes until cheese is melted and jam begins to bubble.

Careful, the jam gets HOT!  I would suggest making this an appetizer and it would go great with a nice white wine.  For more ideas visit their site: www.stonewallkitchen.com

  2. Another variation to this is to use different spreads and different cheeses…

    This weekend I tried one that may be the best I I have had yet!

    The spread was a lollipop tree pepper jelly, with sweet vidalia and cranberry.

    For the topping, this time (instead of my usual gorgonzola) I used a combination of lighter cheeses – sprinklings of feta, blue cheese, and fresh shredded parmesan.

    I also love a homemade crust but I think for this one, the Boboli is magnificent.
